Easter is a time for gathering around the table with family and friends, enjoying a relaxed morning, and sharing a great meal together. On Sunday, April 5, we’re opening the doors early at 9:00 AM at Austin’s American Grill (Downtown Fort Collins, Harmony Road in Fort Collins and Downtown Greeley) and inviting you to celebrate the holiday with a special Easter brunch menu.
Whether you’re starting the day after an egg hunt, meeting up with family, or simply looking for a comfortable place to enjoy a great meal, our team will be ready to welcome you.
A Brunch Menu for Everyone
Our Easter menu features a mix of classic breakfast favorites and a few Austin’s specialties.
If you’re in the mood for something traditional, The Usual brings together two eggs any style, applewood bacon, breakfast potatoes, and wheat toast — a simple, satisfying way to start the day.
For something with a little kick, the Smothered Burrito is packed with scrambled eggs, crispy potatoes, chorizo, cheddar cheese, and wrapped in a chipotle tortilla before being topped with hatch green chile, sour cream, and pico de gallo.
Sweet brunch fans can dig into our French Toast, made with thick-cut brioche and topped with granny smith apple compote, served with applewood bacon and breakfast potatoes.
Other brunch favorites include the Avocado Egg Sammy with smashed avocado, Monterey Jack cheese, crispy hashbrowns, and chipotle aioli, and our Chicken & Green Chile Hash, featuring rotisserie chicken, hatch green chiles, potatoes, caramelized onions, two eggs, and pico de gallo.
Holiday Favorites from the Kitchen
In addition to our brunch dishes, we’ll also be serving a couple of hearty holiday options.
Our 10 oz Prime Rib features slow-roasted Certified Angus prime rib served with au jus and roasted garlic mashers.
Or enjoy our Glazed Ham, applewood and hickory smoked and served over roasted garlic mashers — a classic Easter favorite.
Brunch for the Kids Too
Younger guests have their own options, including a Kids Scramble with egg, bacon, and toast, or a smaller portion of our house-made Kids French Toast served with their choice of side.
A Toast to Easter 🥂
No brunch is complete without a drink to celebrate the occasion. We’ll be pouring fresh Mimosas with your choice of orange, pineapple, ruby grapefruit, or blood orange.
If you’re in the mood for something bold, try our Espresso Martini made with cold brew coffee, Tito’s vodka, and Mr. Black coffee liqueur. Or go classic with an Austin’s Bloody Mary, featuring house-infused pepper vodka and all the garnishes.
